Cauliflower Sushi Rice

This is a perfect option for sushi lovers that are trying to avoid grains. The arrowroot starch helps the riced cauliflower stick together just like white sushi rice. Use the directions from my other post on how to make sushi linked here. This rice also goes perfectly with the teriyaki shiitakes recipe linked here.


(Makes enough for 4 sushi rolls)

Vegan, Gluten-Free, Soy-Free


1 package of riced cauliflower (I buy the frozen pack from Trader Joe's)

1/4 cup of arrowroot starch


In a medium sized sauté pan, sauté the cauliflower rice until thawed. Slowly mix in the arrowroot starch, stirring occasionally. It is done cooking once the cauliflower rice is sticky. Let cool before adding it to sushi. Enjoy!
