Date Waffles

These waffles are a great breakfast option for adults and kids! They're sweetened from dates, and are gluten free and vegan. I love to batch make these and freeze them. All you have to do is pop them in the toaster oven and you have a quick-to-make breakfast.

(Makes 10 mini waffles)


Ingredients:

1 1/2 cups oat flour

1/2 cup coconut flour

1/2 cup date syrup, or 5 dates blended with a bit of water

1 1/2 cups oat milk or almond milk

1 tbsp baking powder

1 tsp vanilla extract

1 tsp cinnamon


Whisk all ingredients together. Using a mini non-stick waffle maker, put around 2 heaping tbsps of batter in the middle of the waffle maker and press down for about 1 1/2 to 2 minutes.
