Hummus + Veggie Spring Rolls


(Serves 1)

Vegan, Gluten-Free, Soy Free


Ingredients:

2 rice paper wraps

2-4 leaves of green or red leaf lettuce

1/2 cup of shredded carrots

1/2 heirloom tomato, sliced thin

1/2 small cucumber, sliced

1/2 red pepper, sliced

2 tbsps of hummus





Soak the rice paper wraps in warm water until soft. Lay out the wraps on a plate and spread hummus in the middle. Top with veggies and wrap it up! Serve with coconut aminos or any dressing you like.
