Pink "Yogurt" with Pomegranates

I used to love yogurt as a kid, and when I decided to stay away from dairy as I got older, I loved to try dairy-free yogurts. To be honest though, they were never very good eaten plain - I always had to add maple syrup or honey to them to make them taste better. And the ingredients in most of them aren't ideal. So as I leaned more towards eating a whole-food plant-based diet, I decided to create a "yogurt" made with only whole-food ingredients.

(Vegan, Gluten-Free, Soy-Free)

(Serves 1)


Ingredients:

1 large ripe banana

1 frozen pitaya packet

1/4 cup of gluten-free oats

1/4 tsp of vanilla powder

2 tbsp of water

1/4 cup of pomegranate seeds


Blend all of the ingredients, except for the pomegranate seeds until smooth. Pour into bowl and top with pom seeds!
