Spanish Roasted Smashed Potatoes

For this recipe, always make more than you anticipate to eat, because these are addicting!

(Vegan, Gluten-Free, Soy-Free)

(Serves ~4)


Ingredients:

1.5 pound bag of baby gold potatoes

1 cup of tomato paste

Smoked paprika

Garlic powder

Dried oregano


Preheat the oven to 425F. Steam the potatoes until cooked through. Then on a large baking sheet with parchment paper, smash each potato with the bottom of a glass cup. Spread the tomato paste on each potato and drizzle the spices on each as well to your liking. Do the same on the other side of the potatoes. Bake the potatoes for 15 mins or until crispy. Enjoy!
